pumpkin chocolate chip muffins

I haven't posted a recipe here in a hot minute so I decided to rectify that. This cold rainy morning inspired me to get back in the kitchen and bake some yummy comfort food. The return of autumn always brings back pumpkin flavored foods. In that spirit, I decided to make some pumpkin chocolate chip muffins to make my breakfasts a little more interesting.


Ingredients - 

  • 3/4 cups of sugar
  • 1/4 cup of vegetable oil
  • 2 eggs
  • 1/2 teaspoon of vanilla
  • 3/4 cups of pumpkin puree
  • 1/4 cup of water
  • 1 + 1/2 cups of white flour
  • 3/4 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of ground cloves
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground nutmeg
  • 1/2 cup of semi sweet chocolate chips
Directions - 
  • Preheat the oven to 400 degrees Farenheit.
  • Grease muffin tin.
  • In a medium sized bowl, mix sugar, oil, eggs, and vanilla until combined. Then add water and pumpkin puree.
  • In large sized bowl, combine flour, baking powder, baking soda, cloves, cinnamon, nutmeg, and salt.
  • Add wet ingredients to dry mixture.
  • Once combined, stir in chocolate chips.
  • Fill muffin tin approximately 2/3 with batter.
  • Bake for 20 minutes.
  • Take out of oven and let cool.
  • Devour!
